About the Wine Maker
The small domaine of Pierre Baillette is now run by his daughter Périne, who is married to Alexandre Chartogne (from domaine Chartogne-Taillet). The vineyards are situated in small plots in Trois Puits, Rilly la Montagne (Premier Crus) and Verzenay (Grand Cru), where the 3 most important grapes of Champagne are cultivated; Pinot Noir, Chardonnay and Meunier.
The Baillette family is particularly devoted to their terroir and produces vineyard-specific wines with great care to natural methods. Since 2010 no pesticides and herbicides are used on the vines. She also tries to use as less as possible machines, so the vines are growing wild. But two horses (Tarzan and Saumur) are often walking in the vineyard, to plough the soils. Wines are aged in the deep, natural rock cellar between 3 to 6 years and at least 6 month into bottle before they leave the domaine.
