This Burgundy wine from 100% Sauvignon Blanc comes from the village of Saint Bris. It’s the only appellation in Burgundy where wines can be made from Sauvignon Blanc, which is usually cultivated in the Loire Valley or South West.
Eric Lavallée, the winemaker of Domaine Grand Roche, practices sustainable viticulture. Harvesting is done mechanically. After harvest follows the temperature-controlled fermentation, pressing, fermentation only with indigenous yeast, and a malolactic fermentation. Ageing in stainless steel, temperature controlled tanks for 9-12 months.
100% Sauvignon Blanc
Behind its light gold color, Saint Bris is hiding aromas of citrus fruit, blackcurrant and licorice. The taste is mineral, dry and very delicate on the palate.
It pairs very well with goat cheeses, fish dishes and shellfish.
About the wine maker
Working with passion, Eric Lavallée takes great care of the vines all year long. He supervises and guides it to extract the best of the fruit during the harvest. The use of advanced technology combined with a traditional savoir faire ensures the most typical expression of the wine and its appellation. In the vineyards, he practices sustainable growing. The domaine is in the process of being taken over by Eric’s son and daughter.
