Rosé des Pins, by Hervé and Patrick Lamothe from Chateau Haut Bergeron, is made of 100% Cabernet Sauvignon. This rosé is a result of a direct pressing, which gives it a great finesse thanks to a great respect for the juice. After a cold stabilization period of 36 hours, the juices are transferred to three year old barrels where they undergo their fermentation. The vinification and elevage are very similar to those of their dry white wines, with a maturation on fine lees and bâtonage for six months.
The color is light pink with vibrant coral hues. The bouquet is rich on the nose, with a varied cocktail of citrus fruits, white flowers but also lychees. The palate is round, fruity with tones of grapefruit, banana and lychee. A rosé with finesse!
