Tasting Notes
The Millésime 2013 has all of a grand vin. Its vilification specificity is the use of the poignettage technique to reinforce the richness of the wine, which also means two remuages by hand.
Vinification in stainless steel, plus 21 days in oak barrels. Production of only 895 bottles. Brut Nature, dosage 2.5 g/l.
Subtle and ample, this champagne is perfect with contemporary gastronomy and complex structures.
About the Wine Maker
According to winemaker Jerome Lefèvre, luxury is time, and at the domaine they are convinced a rich and hearthy soil is the only condition to elaborate an exceptional wine. Thus, he grows his small vineyard (only 1,07 hectare) the organic way through a global and slow approach: following Jerome Lefèvre’s principles, they work almost entirely by hand, reducing the use of mechanics and petrol to the minimum. They plough the soil by horse and they only use organic and essential oils. Each vine requires a specific attention.
